Ode to Nigella 27 – Pollo alla Cacciatora

This is out of Nige’s latest, Nigella Express, and I was keen to give it a go because a) it was quick, b) it didn’t use any ingredients you wouldn’t normally find in my cupboard on any given day and c) the picture was purdy.

  • 1tbsp garlic oil
  • 75g pancetta cubes
  • 6 spring onions, finely sliced
  • 1tbs rosemary, finely chopped
  • 500g chicken thigh fillets, each cut into four pieces
  • 1/2tsp celery salt
  • 125ml white wine
  • 1x400g can chopped tomatoes
  • 2 bay leaves
  • 1/2tsp sugar
  • 1x400g can cannellini beans (optional)
  1. Heat the oil in a heavy-based pan and fry the pancetta cubes, spring onions and rosemary for a couple of minutes
  2. Add the chicken pieces and celery salt
  3. Pour in the wine and let it come to a bubble before adding the tomatoes, bay leaves and sugar
  4. Put the lid on and let it simmer for 20 minutes
  5. Drain the cannellini beans and add to the pan to heat through
  6. Serve with a green salad and/or steamed rice – I served it with my foccacia and a green salad.

    I made this! And it was sensational, thank you! We ate it two nights running. Only I couldn't be bothered to make a salad (I'd just cooked a chicken dish and rice, I wasn't doing ANYthing else) so I shredded some silverbeet and threw it in the pot with the chicken for the final few minutes, for greens.

    And I can't believe you wrote that the recipe calls for nothing you wouldn't ordinarily have in your pantry on any given day! You regularly stock pancetta cubes?! You are TRULY a foodie.

    Anyway. Yum. Thanks. I've printed it out and it'll be made again and again.

    it doesn't have te be pancetta… Bacon will do just great!
